oduvanchik”, “soffione”, e in italiano ha tanti nomi popolari, da “denti di leone”, a “grugno di porco”, da “cicoria asinina” a “piscialletto” (è infatti diuretica), è anche ricca di vitamine B1, B2, B3, C, E, K e altre.
Il tarassaco contiene boro, ferro, calcio, magnesio, zinco e fosforo. La pianta ha un sapore un po’ amaro, ma questa amarezza stimola la digestione. Inoltre, abbonda di antiossidanti.
In Russia, è generalmente considerata un’erbaccia, e, quando appare tra la tarda primavera e l’inizio dell’estate, i russi, e specialmente quelli che hanno le dacie, cominciano la lotta contro il tarassaco. Ricetta per l’insalata di tarassaco: un mazzo di foglie di tarassaco, 1 carota, 1 cucchiaino di succo di limone, 1 cucchiaino d’olio d’oliva, sale e pepe.
Preparazione: per l’insalata bisogna usare le foglie giovani del tarassaco, prima del periodo di fioritura. Più giovani sono e meglio è. Se sono già più mature, immergetele in acqua salata per 1-2 ore per eliminare la loro amarezza.
Tagliate le foglie di tarassaco, grattugiate le carote alla julienne e condite l’insalata con succo di limone e olio d’oliva. Aggiungete sale e pepe a piacere. È inoltre possibile aggiungere scalogne fresco, prezzemolo, 30 g di noci, o usare olio di lino al posto dell’olio d’oliva. Oppure potete aggiungere panna acida o maionese fatta in casa. Insomma, sperimentate!
