Description of problem
Prior to this, my OS drive was plugged in to a sata expansion card and three HDDs were plugged in, everything worked fine, Windows booted from the SSD and the three drives that were plugged in were recognized. Once I finally got a sata cable to plug in my final HDD and got the RAID array setup in my BIOS/UEFI, the computer rebooted and went straight back to the BIOS again. I checked my boot order, nothing is listed. That makes sense for the raid drive, but not the OS drive, so I plug it in to my 5th onboard SATA port (which is normally disabled thanks to an m.2 drive) and it boots just fine. (Actually I had a bluescreen and INACCESSABLE_BOOT_DEVICE error but I made it through this just fine. Note: this occurred several times while moving the SSD around, but was easily fixed each time by a few automatic error-driven restarts, booting into safe mode, and then restarting the computer one last time.)
Now, everything works as it should be, aside from me being unable to plug my OS drive in to its original port and continue on with my life. At this point, I'm beginning to suspect that, somehow, the sata card is fried.
Something... odd, but worth noting. Immediately after creating the RAID volume, when the computer would reboot, I'd see a VERY quick flash of an old legacy-style screen that was too fast to read - this went away after a reboot or two of trying to get the OS drive working again. I think this may have been a screen for either the RAID controller, or possibly the Sata card?

Cause/Steps to recreate the issue
After creating a RAID volume, mobo fails to recognize a Sata Expansion card that was in use for over a month prior to creating the volume.
What I've tried so far to resolve the issue
Switching back from Intel RST back to AHCI.
Removing the four drives that make up the array and leaving only the OS drive in.
The drivers for the expansion card are also up to date - while it shouldn't make a difference as it's post-Boot, I did try using the setup exe for the expansion card's drivers, which did nothing. I also tried manually installing them - both the generic as well as the specific ones, no change either way. I did not, however, uninstall and reinstall - though that really shouldn't make a difference.
Moved the expansion card to another PCIE x1 slot.
Tried plugging a random drive into the Sata card - it's not recognized at all, BIOS, OS, or otherwise.
Tried accessing boot menu (F8), drive still not listed.
Tried spamming Ctrl M to get into the expansion card's menu - suggested in it's manual, but also mentions that a screen comes up when you should do this, similar to the mobo's splash screen telling you to press F2 or Delete to get into BIOS... But I've never seen this screen, before OR after making the RAID volume.
