I'm having trouble associating .xml files with Excel 2016. I tried previously through the "open with" option when I right clicked and got the icon to show. I noticed it looked a little different:

I tried it again and chose Microsoft Excel (not Excel 2016) because it's the one located in C:\Program Files (x86)\Microsoft Office\root\Office16\EXCEL.EXE

I can open this .exe file without a problem so it should work, right? Nope. It gives me the same error as when the odd looking Excel icon was default.
So I try to change default file associations through the OS by changing .xml associations to the C:\Program Files (x86)\Microsoft Office\root\Office16\EXCEL.EXE location:

And when I double-click to open it, it still doesn't run. Nothing happens. I have to manually open files from within Excel and I have no idea how to solve this problem. I don't have to manually open approximately 300 .xml files so I can transfer them into a single .xls file. I have 4 days to do this and I don't want to waste time opening files.
TL;DR: I want to associate .xml files with Excel but Windows 10 makes it difficult.
