How to verify all components are functioning correctly after lightning damage and partial replacement.

Description of problem

Hello everyone, back in May I had a lightning strike fry my computer, old wiring with cheater plugs were the cause and has since been fixed and is grounded and on a Sinewave UPS. Insurance had me take it to a shop to get it diagnosed that they couldn't get it to boot even after replacing the PSU and paid out on the claim in June, I have been using my laptop until purchasing a new i9 7900x and Asus Strix Motherboard this week.

After trying to get it to start one last time and swapping to old ram it booted, however I began quickly encountering System instability and locking up, games crashing instantly, a video card not being detected, corrupted system tray, Apps and Network settings hanging or not responding, etc.

When this issue began

After Lightning strike in May, however just recently able to get it to post.

Cause/Steps to recreate the issue

GPU Bios Flashed and overclocked so no warranty, same with CPU.

Issue recreated by launching PC, most instability gone now but still some issues with GPU's

What I've tried so far to resolve the issue

Before the new motherboard & CPU arrived this week, I tried some old ram and system posted. I then went and purchased a 32GB kit and it worked fine as well.

I was able to boot but the system was unstable for some reason. I ended up flashing BIOS from 1.9 to 1.D.

After the next boot I still had some slight stability issues but it was better (Apps hanging, network stack issues, etc.) So I reduced the overclock from 4.4Ghz to 4.0 and reduced the voltage a bit. Now after running a memory and CPU test using Intel XTU each for 5 hours it seems to be stable on the Memory/CPU front.

Next I tried doing some benchmarks with Furmark and the system immediately rebooted, after loading I set Power Target in Afterburner to 121% and it worked fine for about 10 Minutes then crashed.

Tried variation of SLI Setting card# 1&3 w/ 2 Dedicated to PhysX and every other variation as well as SLI Disabled and was still crashing, updated to new drivers and rebooted.

Tried Launching Divinity 2 and Wasteland 2 and immediate crash. Then tried Battlefield 1 and it crashed after the game loaded. After physically removing the cards and reinserting them the system stopped rebooting and thus far hasn't done it again and has run Furmark for about 2 hours before I stopped the test.

My question I guess is should I continue to fight this?

Or do you think i'm just going to be fighting random issues constantly and would be better off selling the CPU, Motherboard and video cards on Craigslist/Ebay and listing the issues and proceed to install the new i9, Board and order a pair of 1080ti's (if I can find one in stock) with the money from selling the old system?

Also system seems to be running hotter, at load when running Kali with hashcat prior to the lightning damage the GPU's used to not pass 45-49* C now it seems to hit about 60-65*C at Full load. Could the water in the loop have scummed up a bit? There is a Dye in the fluid that is supposed to resist bacteria and other nasties as well as a Silver Kill coil but if the system was just sitting for 5 Months could that be a part of it?
